- He has published 36 research and review papers in national and international journals and presented 23 research papers in national and international conferences/ seminars/ workshops/ symposia. He wrote 4 book chapters, 3 popular articles, 3 laboratory manuals.
- Being a Major Advisor, guided 15 M.Sc. students of the Dept. for thesis dissertation work and as a member of Research Advisory Committee contributed to thesis research planning of more than 50 M.Sc./Ph.D. students from different departments related to food discipline.
- He developed technologies to store paneer for about 2 months at refrigeration temperature, to prepare milkcake with shelf life of about 2 months at room temperature and to reduce splitting in kidney beans meant for the preparation of ready-to-cook product. He has also developed processes for prevention of liquefaction of jaggery during rainy season, utilization of whey to develop herbal beverages, dietary-fibre supplemented low-fat paneer, and improvement of fatty acid profile of edible oil as per WHO recommendations.
- Dr. Anil served as a member of Scientific Panel on ‘Milk and Milk Products’ for national level committee by Food Safety and Standards Authority of India (FSSAI) during 2015-2019.
- Recently he is selected as a member for Scientific Panel on ‘Labelling and claims/Advertisements’ by Food Safety and Standards Authority of India (FSSAI) effective from Jan 2020 to Dec. 2022.
- Editorial Board member and peer reviewer for various journals of national and international repute (Food Biosciences, Journal of Food Science & Technology, Journal of Food Processing and Preservation, Journal of Food and Dairy Technology, Journal of Hill Agriculture, etc.).
- He has been member of various professional societies of National and International repute (DTSI, NGA, IDA, AFSTI, ISHA, etc.).
- He is also honoured as Fellow Member of International Society of Research & Development (ISRD), London, UK.
